Sweetened Coconut milk
This is a dish prepared specially on the first day of the Tamil month of "Adi", which falls during English month of July. After a respite from festivals, during the months from mid April to mid July, galore of festivals start from this day. To know more about festivals, await our series in this site about FESTIVALS IN INDIA. But now simply enjoy the taste of sweetened coconut milk !!! Ingredients Grated coconut 1 1/2 cup Jaggery 1/4th of the grated coconut Cardamom 4 peices Rice 1 teaspoon (soak) Method 1. Add 1 cup of warm water along with the grated coconut and grind it well in a mixie. 2. Strain this and keep this coconut milk aside. (1st milk) 3. Regrind the coconut with a cup of water. Strain this and keep this milk in another bowl. (2nd milk) 4. Again add 1/2 cup of water and to this coconut, add the soaked rice, grind it and strain it. (3rd milk) 5. To the 3rd milk add jaggery, dissolve it and boil it. Strain it to remove mud. 6. To the strained liquid add the second milk and bring it to a boil. 7. Now add the first milk to this and heat it short of boiling. 8. Remove it from fire. Add cardamom powder. COCONUT MILK or Adi Paal is ready to serve. Note : You can dissolve jaggery in water, strain to remove mud and keep it aside beforehand. Consistency level - Thin . Should be able to drink from a cup.
